1 celery diced, 1 carrot diced, 1 small onion diced & sauteed in 1-2 T olive oil or butter in a soup pot
6 large potatoes diced & added into the pot
Top with 2 cartons of chicken broth just covering the potatoes
Cover & simmer for 30 minutesor until potatoes are soft
Then take 1 1/2 cup cheddar cheese shredded mixed with 1/2 cup flour & whisk into the soup..this thickens the soup & breaks up the potatoes.. Top with shredded cheese & crumbled bacon
