Everyone has their own version of this super yummy French peasant dish…However mine is way more Italian than French
1 large eggplant peeled and cubed to 1 inch cubes
3 small zuchini cubed
1 rutabaga or potato peeled & cubed
1 yellow pepper diced (small dice)
1 onion diced
3 cloves of garlic minced
4 T olive oil
1 handful of fresh basil diced
Salt & pepper
2 dashes of hot sauce (this doesn’t make this spicy)
1 quart of canned tomatoes or 1- 28 oz can of diced or crushed tomatoes
optional: 1 10 oz frozen spinach ( I love spinach in this but it is not traditonal)
Sautee all the veggies in the olive oil and top with tomatoes add basil & salt & pepper. Simmer covered for 30 minutes or until all veggies are tender. Stir occassionally..
