Put 1/2 c carrot peeled & diced & 1/2 c onion diced into a pot with 2 T butter & sautee for 5 minutes.. Then add 1 cup rice (use parboiled white rice if you can find it) Then stir in 2 cups chicken broth cover & simmer on medium low heat for 15 minutes ..do not stir . after 15 minutes let it sit for 5 minutes covered but off heat .once all liquid is absorbed fluff with a fork.. top with some parsley or fresh thyme or even some toasted almonds if you have it but it isn’t necessary…
