2-3 T butter, 3 T diced onion, 1 T diced carrot, 1 cup rice (I like a converted rice like Uncle Bens, that type of rice doesn’t get mushy), 2 cups chicken broth, fresh
thyme(optional). Cook the onion & carrot in the butter, add the rice and cook 5 minutes, add the chicken broth. Stir. Cover. Simmer 15 min. fluff with a fork.
