This was the dessert we did last night. This recipe was adapted from Giada & when I couldn’t find the lemon, we tweaked the recipe with an orange & Oh my yes…tis tasty!
Crust: 1 cup flour, ½ c ground almonds, 1 stick cold butter, ½ c sugar, ½ tsp vanilla, 1-2 T water. Mix everything together in a food processor & chill at least ½ hour. Roll out and put in a tart pan. Poke with a fork all around & bake until golden brown. Cool before filling… this doesn’t roll out too well. Roll out as past as you can & place the dough in and push down to shape into tart dish
Filling: 2 cups ( I used whole milk) ricotta cheese, ½-2/3 c powdered sugar, 2 tsp orange zest. mix together and spread in the baked pie crust. Top with fresh berries of your choice we used blackberries & raspberries.
