Well today was side dish cooking class and we made all sorts of yummy things..we started with the risotto. 2-3 T butter, 3 T diced onion, 1 cup Arborio rice, 3-3 1/2 cups chicken broth, ½ cup parmesan cheese. Fry onion in the butter 5 minutes, add the rice and stir 5 minutes, Add in 3 cups of broth and stir & simmer 20 min. This should be a creamy/saucy consistency. Add more broth if necessary. stir in parmesan & salt & pepper
