1 whole organic chicken cut up or just buy the pieces on the bone (about 2-3 pounds depending on the size of your family)
3 T organic olive oil if you have it (if not your reg. olive oil)
1 onion sliced
2 cloves of garlic minced
3 organic potatoes peeled & quartered
Salt & pepper
juice of 1 lemon
3 sprigs of fresh tyme or 1 tsp dried
Put 1-2 T olive oil in a frying pan. Brown chicken pieces then place in a baking dish. Then brown your onion & potatoes together with garlic & put that in the baking dish with the chicken pieces. Season with salt, pepper & thyme, remaining oil & lemon juice. Cover & bake 350 for 1 hour
