In a cast iron skillet.. drizzle 2 T olive oil & 1 t butter. Add 1/2 c sliced red onion, 1 sliced zucchini, 2 med. potatoes sliced & 1/2 a pint of cherry tomatoes cut in half. Sprinkle with salt & pepper, 6 fresh basil leaves chopped, 1 sliced garlic clove & stir. Top w/ 1/2 c grated romano cheese & about 1/2 c seasoned bread crumbs & top with a drizzle more of olive oil. Roast in oven at 375… after about 25 minutes… stir & top with a bit more cheese & bread crumbs.. should be ready after an additional 20-25 minutes… ( Found a variation of pinterest & tweaked it to our liking)
