Rustic Italian Meatballs

2 pound of ground beef (80/20) I use grass fed beef, 2 eggs (farm fresh if you can), 3/4 c freshly grated romano cheese, 1 cup italian seasoned bread crumbs, 2 minced garlic cloves, 8 large leaves fresh basil chopped, 1/4 c water, salt & pepper.. Mix everything together except the beef…once mixed add the beef & stir until just combined . Shape into balls then flatten slightly. (this helps it cook faster) Heat about 1/4 inch of olive oil in a frying pan on medium heat. Once oil is heated add your meatballs. Do not turn until you see the edges nicely browned & the meat start to turn from pink to brown. Flip, once the other side is also nicely browned they are ready. Drain & eat.. You can bake these at 375-400 about 25 min. if you do not want to pan fry until browned. Great with a good crusty loaf of Italian bread…or top with sauce & cheese..You can also use meatloaf mix which is veal/pork & beef..
