Saltimbocca, my favorite!

Traditionally this is made with thin sliced veal however I make it with boneless chicken breast, turkey breast or even sliced pork loin
1 Pound of meat your choice from above. you want it thin cut & pounded
Butter for frying, 1 – 1 1/2 cup chicken broth or stock, 1 cup flour, 1/3 pound of proscuitto, 1 cup fresh baby spinach, 8 oz of provolone cheese sliced or shredded.
Dip the meat in flour on both sides & brown in a frying pan with butter. You’ll want to add a little oil to the pan to keep the butter from burning. Once the meat is all browned place in a baking dish. Then put 2T butter in the frying pan & add 2 T flour and stir together. Then you’ll add 1 – 1 1/2 cups of chicken broth or stock to make a sauce. start with 1 cup of broth & once it thickens add more broth to a gravy consistency..once it thickens pour over meat. Then you’ll top the meat with proscuitto, fresh baby spinach & then provolone cheese..Cover & bake for 35-40 minutes at 375….a few fresh sage leaves also work great in the sauce
