I medium zucchini sliced
2 T olive oil or coconut oil
1 onion sliced
Salt & pepper to taste
Sautee all together in a frying pan. Uncovered until cooked and lightly browned
Rice:
3 cups of water
1 1/2 cups of rice
4 slices of american cheese or cheese of choice
1 – 2 T butter
Salt & pepper
place rice & water in a pot and cover with a lid and cook on medium 15-20 until the liquid is absorbed. The fluff with fork. Then add the butter ,cheese and salt & pepper and stir with the fork. Serve hot
I like to serve the zucchini over the cheesy rice but my kids like it separate. They fear they could miss an onion and accidentally eat it (yikes)
