Smothered Chicken

This recipe has been a long time favorite for me. From my Florida days eating at Breakers overlooking the ocean this was a favorite recipe. This is full flavor and oh so satisfying.

I take boneless skinless chicken breast & cut them in half lengthwise making them thin. I season them with salt & pepper or even Cajun spices & brown them in butter then remove from the pan. I add some more butter & olive oil to the pan and add some sliced onion & mushrooms and cook until golden. I put the chicken on a baking sheet and top with onions & mushrooms & provolone. Bake 15 min 375. You can also just do this on the stove and put the chicken back in the pan & top with the cheese and cover with a lid. I like it browned and while it’s in the oven I like to cook whatever veggie we are having in the pan from the chicken for great flavor.
