Southwest Eggrolls

Now.. I will warn you ahead of time;  you will not find these in Mexico. However, we had some fun making them at a recent cooking class at my place..

1pound ground beef, 1 small onion diced, 2 cloves minced garlic, 1 c. black beans drained, 1 cup corn, 1 T each chili powder & cumin , 1 small bottle taco sauce (1cup) Shredded Monterey Jack cheese & 1 package of egg roll wrappers & oil for frying.. Brown your beef & drain, add in onion & garlic sautee 5 minutes add beans, corn, seasonings & taco sauce & a bit of salt & pepper to taste. Cook on med. heat for about 10 minutes. Take a wrapper & place it on a diagonal, put 2 T of the filling & top with some shredded cheese. Brush some water around the edges & start to roll tucking in the side corners as you roll. Repeat until them are all filled. Fry these in 1/2 in of hot oil until golden brown.  Serve with a sauce of salsa & ranch mixed together
