Now this is a great way to get your veggies!! We love this (yes even the kids). I cut a large spaghetti squash in half lengthwise. Scoop out the seeds. Season with salt & pepper and a drizzle of olive oil. Bake, cut side down, covered with foil until fork tender ( about 1 hour.) Meanwhile sautee a diced zucchini, diced small onion, 2 cloves of minced garlic in 3 T olive oil. Add 2 large tomatoes diced to the vegetables. Add salt & pepper and fresh basil. Top with some light cream & romano cheese. When the squash is fork tender, run a fork through the squash to get the spaghetti like shreds . Add to the cooked vegetables & stir. Top with some more cheese
