Spinach & Artichoke Pinwheels

1 box of chopped spinach
1 clove of garlic
2 T olive oil
1 can artichoke hearts (not marinated in oil) chopped (you need to chop manually)
5 slices of proscuitto chopped (optional)
black olives chopped
1/4 cup grated parmesan cheese
2 sheets of puff pastry thawed ( found in the freezer section)

Sautee all ingredients together except the cheese & puff pastry. Preheat oven to 400. Unroll the puff pastry and spread half the mixture over the puff pastry. Roll it up like a jellyroll. Slice into 1/2 in slices. Place slices on a baking sheet. Repeat with the other sheet. Bake the pinwheels until golden brown about 15-20 minutes
