Spinach Pesto Palmiers

Palmiers are typically made w/ salt & sugar but Ina Garten made a savory one w/ sundried tomatoes & goat cheese but I didn’t have those ingredients …and as you know me by now I cannot follow a recipe of someone else’s I always tweek it to my liking so…

1 sheet of puff pastry, 4 oz fresh spinach, 2 T olive oil, 1 minced clove of garlic, 1/2 cup parmesan, 1/2 c basil, salt & pepper & 2 oz of goat cheese. Sautee spinach, olive oil & garlic until the spinach wilted. Place the spinach in a food processer w/ basil & goat cheese & puree. Flour your surface, roll out the puff pastry sheet. Top w/ the pesto & parmesan cheese. Fold both long sides in a 1/4 of the way lengthwise & then again You should have both sides fold twice meeting in the middle now fold in half one side over the other. Wrap in wax paper & freeze slightly. Slice & bake until golden… You don’t have to freeze it if you don’t have the time but it makes it easier to cut. Bake 375 until golden brown.. You could also just roll it like a pinwheel/ jellyroll & slice too if it’s easier for you
