Sautee 1 1/2 pounds of sliced boneless pork loin in 1 T coconut oil (or other oil) Then set aside
Sautee 1/3 cup sliced scallions, 2 cloves of minced garlic, 1 head boy choy cleaned & sliced ( or several baby boy choy)
Add the meat in & pour in the sauce. Sauce:1/3 cup Apricot or berry preserves, 3 T soy sauce or liquid aminos, 1/2 cup chicken broth & 1 T corn starch dissolved in the broth
Top with 1/2 cup chopped nuts alonds, cashews or peanuts….
Serve with rice noodles or steamed rice
