2 pounds boneless skinless chicken breast, 2 cloves of garlic, 2 T cumin, 3 T dried chilli powder, 3 T vinegar, 2 T olive oil, salt & pepper…All marinated in a bag 3 hours – 24 hours
Black Bean Salsa: 1 can black beans drained, 2 cloves garlic, 1 diced tomato,1 jalapeno pepper chopped, 1/2 small onion diced, 1/4 cup cilantro leaves, salt & pepper OR shortcut :1 can black beans drained , 2 cloves garlic, 1 jalapeno & 1/2 jar of store bought fresh salsa…Chop together in a food processor or a food chopper
3 Large peppers sliced, 1 large Onion sliced & 2 T olive oil tossed together
So what I do is grill the marinated chicken on 1 side of the grill. Wrap the peppers & onion in foil and throw them on the other side
Remove the chicken from the grill top with shredded cheese, olives grilled peppers, & black bean salsa…
Any leftovers are great for quesadillas
We had this for dinner tonight YES WE GRILL YEAR ROUND!!!
