I am a traditonalist when it comes to Thanksgiving…So here is my Thanksgiving dinner menu
Brined Turkey: I marinate the turkey with oranges, thyme & rosemary for 24 hours.
Bread Stuffing: 2 stalks of diced celery & 1 large spanish onion diced & sauteed in 1 stick of butter until tender added to I loaf of white bread cubed and 1 cup of chicken broth and salt & pepper & parsley. Baked in a buttered casserole dish for 1 hour
Cauliflower & Broccoli Gratin: Steam 1 head each of broccoli & cauliflower and place into a greased 9 x13 . 3 T of each butter & flour and make a roux add 2 1/2 cups milk and mix until slightly thickened and pour over veggies add 8 oz of grated cheddar cheese and bake until bubbly
Mashed potatoes: cook 8 large peeled & diced potatoes in a pot of water with 1 teas. of salt until soft. Drain & whip with 3 T of butter and milk as needed wtih salt & pepper to taste.
Green bean Casserole 1 pound of frozen green beans steamed and drained mixed with 1 can of cream of mushroom soup, 1 cup milk , 1/2 teas of pepper, fried onions baked covered in a casserole until bubbly
