Peel & cube 10 large potatoes ( I prefer an all purpose potato or a yukon golden no russets)
place in a large pot ,cover with water & 2 tsp salt. Cover & cook on medium high heat until they are soft. Drain well.
Add 4 T butter & 2/3 cup light cream to start (or milk) & salt & pepper & whip until smooth adding cream & milk to your desired consistency.. These will hold on low in a crock pot if you’d like to make them the morning of Thanksgiving of your meal
Makes enough for approx 8 people
